Paula's recipe for Pickled Beets

When you go to a lodge meeting most every month and the lodge furnishes the meat and the members bring dessert, salad, and vegtables you run out of different things to make. Especially things that are easy and fast. Today I made my special recipe for pickled beets.

1. Drive to Wal*Mart
2. Buy about three jars of pickled beets
3. When you get home dump them in a bowl
4. Chop a few onions for the top (this makes it look like you did something)
5 Cover and refrigerate
6. Take them to the meeting and be very careful not to slush the red juice on the floorboard of your car

No one ask and I didn't tell but the bowl was almost empty

I think this is a good way to make pickled beets. You are a genius. I am going to remember this recipe. I wondered about you boiling beets for hours to take off the skins. After that it is not too hard, but still...

oh, paula, you are funny!! i thought i was going to get an idea of how much sugar, vinegar etc. i take boxed scollaped potatoes, but i add some onion and a can of corn! get lots of comments about cutting all those potatoes--i usually make up 2 boxes !

Hey, I like the way you think!! That is really a cool idea. I took some Macadamia nut cookies on Christmas one year and everyone said mom, I had no idea you still baked. They still don't know I got the cookie dough already made up from Schwann's and sliced them and baked them, and never said a word, that I had not made them from scratch.

How funny! I actually buy canned beets and add vinegar,chopped fresh onions and occasionally, I add cucumber slices. Add a dash of salt and plenty of ground pepper and you're ready to go.

PAULA, I LOVE PICKLED BEETS.

HERE I GO AGAIN ABOUT A FEW YEARS BACK WHEN LIVING UP IN THE MOUNTAINS BETWEEN CANON CITY AND WESTCLIFFE COLORADO.
THE ELEVATION WAS 8500 FEET AND PERFECT FOR RAISING A GARDEN, THE SHORT SEASON THINGS THAT IS.
THAT RICH MOUNTAIN SILT PRODUCED WONDERFUL CABBAGE, TURNIPS, LETTUCE, SWISS CHARD AND YES, ARMLOADS OF RED BEETS FOR GIVING TO OCCASIONAL VISITORS.
I NEVER TIRED OF VIEWING THE NUMEROUS ROCKY MOUNTAIN PEAKS.

HOWEVER, BESIDES WATCHING WILDLIFE AND HUMMINGBIRDS AND MANY OTHER BIRDS, ENJOYED MAKING GOOD PICKLED BEETS FROM SCRATCH.
ENJOYABLE, REALLY, BOIL A WHILE UNTIL A TWIST IN THE HAND REMOVED THE SKIN OF THE BEET, CUT THEM TO BITE SIZE AND INTO THE LARGE KETTLE OF SPICED LIQUID. HALF VINEGAR AND HALF WATER WITH LOTS OF SUGAR AND CLOTH BAG OF PICKLING SPICE. SOME SALT TO TASTE.
NOT SPEAKING OF A FEW SMALL JARS, THIS WAS SERIOUS BEET PICKLE MAKING.
MY FAVORITE UTENSIL WAS AN OLD STYLE PRESSURE COOKER, OF COURSE WITHOUT A LID. HAD TWO OF THEM.
I LOVED IT THOUGH MY GOOD DOG DID NOT BEG FOR ANY PICKLED BEETS. SHE JUST LAID OUT THERE IN THE SHADE AND ENJOYED A DOG'S LIFE.

YOU MIGHT SAY, WHAT DID YOU DO WITH SO MANY PICKLED BEETS ?
THOSE PINT SIZE JARS OF HOME MADE PICKLED BEETS WERE ONE OF THE NICEST GIFTS EVER.

OH HOW I WISH COULD HAVE BEEN PHYSICALLY ABLE TO STAY UP THERE IN THE MOUNTAINS.
MANY GOOD NEIGHBORS UP THERE ALONG THE OAK CREEK GRADE ROAD AND GOOD TIMES AT AUDREY AND JACK SLATER'S GENERAL STORE AND SUNDAY NIGHT CHURCH IN THE BARN LOFT OF JACK'S BIG BARN, FOLLOWED BY POT LUCK SUPPER.
OF COURSE MY DONATION WAS THOSE DELICIOUS PICKLED BEETS. TO GET AN IDEA OF WHAT THAT COUNTRY IS LIKE, PRINT IN COMPUTER KEYWORD, westcliffe colorado blog sayit-baldys
