Frito Pie

Well gosh I though everyone knew what Frito Pie is. Its so easy to make and good to boot. You can make little indivdual dishes or a whole pot. Just put frito corn chips in the bottom and pour chile on top. Theirs had beans but I prefer just the chile. Some graded cheese on top and I would never make it without chopped onions on top of that. They didn't give us onions. Not nice to eat them out in public without your toothbrush I guess. My secret I had a Whisp in my purse. Just kidding I have better manners then that but I sure eat onions at home. I don't know what hit John with the sour pickles (I don't think he is pregnant) but he sure can make a sticky mess with them.

Cabin fever hit me this afternoon. I ask John if he wanted to go with me to feed the turtles and he could check the cattle. It was still hot but about time for the sun to go down. He said no he believed he would take a nap. I thought he had been taking a nap all day. I headed west alone. I fed on one end of the stock tank and then moved on down. Scared a big Egret out of the water and it landed behind a bush and watched me feed the turtles. If it wouldn't have been so shy I would have fed it too. As I moved almost to the end of the stock tank I saw something move under a mesquite tree that the limbs were hanging over the water. On closer look it was a black cow with horns. She was in the edge of the water with her head on dry land. She thrashed around and tried to get up but it was evident she couldn't. I went to the truck to call John. The cell phone kept cutting out but he got enough of the message that he came on out. The cow is old but has a calf which we didn't see anywhere. She probably doesn't have any teeth and got weak. We went to his daughter's to tell her to meet John there tomorrow with chains and anything they might need to get her out because she is down by the dam. If that doesn't work they may have to bring the tractor over. Bless her heart she at least picked a place where she is in the shade and can drink water. Oh and I found some small turtles on one end. They weren't bashful. No I haven't named them there are too many and they all look alike.

I hope the cow can be got out without any trouble. Keep us updated on her. Glad that you got to feed the turtles. Maybe it was meant for you to go feed them so you could find the cow. Helen

Oh the poor cow, please update on how she is doing. Poor dear, I hope she'll be okay. It's a good think you went down there.

I know about Frito Pie. I make it lots of days in the winter, it is a favorite of mine.
We had a cow get down in our pond, and had to get her out with ropes. She was fighting to keep her head above water.
Have a good day!

I guess your trip messed up John's nap. But of course for the better.

Shucks, I thought something sweet was made out of the frito's. Like cracker pie, I think there is such a thing it may be mock apple pie. Any you had enough excitement for all of us. Good night.

I'm backwards...I put the fritos on top, I guess to keep them crunchy. I like cheese and onions too. I'm glad to hear John isn't pregnant. But I would have loved seeing ya'll on the news when word got out...ha.
Thanks for the prayers for my Dad.
Take care,
Sheila

Hi,

Well since I am reading your missed posts backwards I am glad the cow is alright. I love Frito pie, I hate beans in chili. When I make my huge vat of chili I only use 1 can of beans.

We used to get cows stuck in quicksand or a mudhole. I was always relieved if we found them and my dad was able to pull them out before they died. Getting stuck in quicksand was my worst nightmare. As we had to cross the Escalante River when the bridge was washed out by old model T. Yes, I am that old. I am glad you found that cow before she died, and John, like a good rancher, came right out to help her out.
