Chicken Fat

I have my dander up this morning about chicken fat. Have you ever noticed how much you pay for the chicken fat they have folded under the chicken pieces? You can't see it and have no idea until you open it at home. I'm a rebel, I don't cook chicken and dressing or stuffing as you may call it on Thanksgiving. I cook it when I get hungry for it and today is the day. In fact it's in the oven right now. I'm also a rebel when it comes to stuffing a chicken (forget about a  big turkey). I line my big iron skillet with foil, put the dressing (stuffing) in and lay pieces of chicken on top. After having made sure the foil is large enough to fold over all around I close it up and bake for about an hour or hour and a half. It really gets under my skin as to how much fat I paid for and  cut off before baking. In my younger years I don't remember all that extra time in preparation to cut all that  fat off chicken.

that's why i never cook my own chicken parts. i either buy rotiserrie chn at the grocery store or the frozen boneless breasts. :)

I get mad when I buy a roast. They always have about a pound of fat on the underside where you can't see it. GROSS!! I buy frozen chicken breast, too. There is a little skin left, but most of it is gone and you are getting much more breast than when you buy fresh.

You are right Paula. You can't even buy a fryer in the store any more. Fryers should be about 3-31/2 lbs. But you can hardly find a chicken that weighs less than 5 lbs now. Hormones in their feed.

You are so RIGHT, Paula! Your dinner sounds so good though...in spite of that nasty, expensive fat! I get mad too but couldn't be without chicken.

Oh, that isn't all. They pump it full of water, too! My ex-son-in-law worked at a place where they manufacture the machines to do that.

I hate all the fat and breading that you get at the fast food places (even KFC, although they're not as bad as some).

The local supermarket deli makes barbecued chickens and they are fairly good. I usually get one every other week or so.

I'm on your side. We buy the big sacks of chicken quarters, and YEP I must throw away 2 lbs of fat, out of the ten pounds of chicken. And this last batch had a couple pieces with about as much fat folded under as the chicken itself.
You did hit a sore spot.
But HUGS from up in Columbus, Texas, anyway!.

I don't buy chicken to prepare, but I have noticed the the fresh veggies I buy at a supermarket(I try to go to the farmer's market most of the time~more fresh & they do NOT do this)are loaded down with water. You are paying for as much water as veggie when you buy swiss chard or kale. They are totally soaked.

I am looking at that recipe - I've never heard it cooked like that - that was interesting - I may try that. Sandie
